Hidden He♥art Vanilla Cupcakes

Why hello there my beautiful people.

It has been a while since I last updated my blog so forgive me for my temporary absence. Juggling between uni,work,baking & training for a marathon ain’t easy let me tell you,

but

I am destined for Greatness & I will not stop until I get T-H-E-R-E.

Ohh on another note,

Lets get baking,shall we? 🙂

The recipe that I’ll be sharing with you guys today is a simple vanilla cupcake with a hearty surprise right in the middle.

Surpriseee!

All you need for this recipe are:

120g butter, softened

150g (2/3 cup) caster sugar

1 teaspoon vanilla extract

2 large eggs

188g (1 1/4 cups) self-raising flour

125ml (1/2 cup) milk

1.Preheat the oven to 180c/350f.

2.Using an electric mixer,combine the butter,sugar and vanilla extract until pale and fluffy.(Approximately 5 minutes)

3.Beat in the eggs, one at a time and as usual one minute per egg.

4.Combine half of the flour into the mixture until just incorporated followed by half of the milk.Repeat this step one more time.

5.Now,take one third of the batter out  and pour it into a bowl and add a drop or two of  food coloring of your choice.

6.Take a cake tin or a pan and spread the batter evenly around <0.5 cm in height.(This really depends on the size of your cupcakes so use your judgement for this step)

7.Bake for around 5 minutes or a couple extra until a skewer inserted in the batter comes out clean.

8.Once it is cooled, use a small heart shape mould and cut out cute little hearts and set it aside.

9.Next,line muffin pan holes with pretty paper liners and drop a tablespoon of the remaining batter into the liners.

10.Take your heart shaped cut out and stick it right in the middle of the batter.Then take 2 tablespoons of cupcake batter drop it onto the heart shape to cover it.Add more if your heart is still very much visible.

11.Bake for 20 minutes or until golden brown.Do not panic if your hearts are nor hidden completely.You can always frost it with icing to hide it.

p/s: If you love someone tell them, because hearts are often broken with words left unspoken.

      I am truly sorry for the extremely late reply! Anyway, this is a simple and oh so yummy glace icing.

      Stir sifted icing sugar(170g), butter(1 teaspoon) and boiling water(1 tablespoon + 1 teaspoon) until smooth.

      Use icing immediately. If it starts to set before you have finished icing the cupcakes, stir in a few drops of hot water
