Yesterday,I made some Japanese Cheesecake!If you’ve never had Japanese Cheesecake before,you are definitely in for a treat.

Unlike a typical American cheesecake,this cake is

light,fluffy and has a velvety soft texture.

Don’t get me wrong,I am in love with the oh-so-dense-rich-&-creamy kind as well,

but today,

lets do it like the Japanese shall we.

 I’d like to call this the ‘diet coke‘ in the cheesecake world.

Taro Chiffon Cake

So I got my hands on some beautiful taro(yam) from the market and decided to incorporate it into a chiffon cake.So this is what I came up with.

If you are a fan of really light and fluffy cake with just a hint of taro,you’re definitely in for a treat.This cake has a cottony texture and comes in the most beautiful shade of lavender.

A Saturday morning well spent.

Pandan Chiffon Cakes

I have always been intrigued by chiffon cakes in general.Chiffon cakes are light as a feather yet still very moist and oh so very fluffy.

I usually opt for chiffon cakes just because it’s a much healthier option due to the absence of butter .

The chiffon cake that I will be sharing with you beautiful today is Chiffon Cake infused with fresh pandan flavor.

A match made in Heaven.

Mango Mousse Cake

I had a couple of beautifully ripe mangoes in the kitchen,hence I wanted to make a cake that incorporates fresh mangoes .What better way to showcase our seasonal fruit other than the Mango Mousse Cake?:) 

The mousse cake has a base of a soft and moist sponge cake followed by a layer of mango mousse with chunky bits of fresh mangoes and topped with a layer of mango purée jelly. 

I am very pleased with the result as every layer goes so well together.The layers really compliment each other and it accentuates the natural sweetness of the local mangoes.

If you’re not a huge fan of mangoes,any kind of fruits can be substituted or if you are having trouble finding fresh fruits,you can use canned fruits like lychee or peaches for this recipe.
