Taro Chiffon Cake

So I got my hands on some beautiful taro(yam) from the market and decided to incorporate it into a chiffon cake.So this is what I came up with.

If you are a fan of really light and fluffy cake with just a hint of taro,you’re definitely in for a treat.This cake has a cottony texture and comes in the most beautiful shade of lavender.

Semperit/OldSchool Butter Cookies

Class ended a little early today so I got home and decided to start the pre-Raya/Eid baking with ‘Semperit‘ .Semperit is basically  butter cookies taken to a WHOLE NEW LEVEL.It’s very light,crumbly and literally melts in your mouth.The cookies are just so pretty which is an added PLUS.

The recipe is adapted from a popular Malaysian website, myResepi. So why not spare 2 hours of your day and prepare these babies from scratch!It’s easier than you think 😉 .

My first attempt at Semperit was in Adelaide a couple of years back.Well,Raya down under was different but in a good way.I remember baking these until 2am in the morning cause we had a miniature oven back then. So to my Adelaide friends that I have crossed path with & especially to my peeps at 805,803,my favourite red cabbie,my Stars Align family and my crazy girl from botanic apt,

Red Velvet Cupcakes

I first heard of the red velvet cupcakes while scrolling through Martha Stewart’s website.It’s basically a lighter version of a chocolate cupcake but in the shade of dark red and topped with cream cheese frosting.If you must know,the color of the cake is achieved through a chemical reaction between the buttermilk,vinegar and cocoa powder and  a tinsy bit of red food colouring to intensify the colour.

The recipe that I used for the cupcakes is from my oh-so-awesome online baking guru,Bakerella.I have no complaints about this recipe. It’s very light and moist with a subtle chocolate taste which paired so well with my favourite cream cheese frosting recipe.

Italian Meringue Buttercream

Yesterday, my sister & I decided to whip up some cupcakes à la minute.So we came up with just a simple vanilla cupcake with buttercream frosting.

Since I’ve recently gotten a sugar thermometer, I’ve decided to go with the Italian meringue buttercream for the cuppies.Making an Italian buttercream is slightly tricky but the result is just phenomenal.

This particular frosting is just so silky and not too sweet which compliments the vanilla cupcake so well.

This buttercream recipe is definitely a keeper.

French Macarons

French macarons with chocolate ganache filling

 

How can you not LOVE French macarons? A perfectly made macaron should have an eggshell-like crust with a soft centre and pretty little ruffles running along the sides.

 Hence, my journey to baking the ultimate macaron begins. After two very unsuccessful attempts,I have learnt that macaron baking is a very delicate process and somewhat tedious especially for a novice baker like me. After a little tweaking of the recipe here and there, lo & behold I present to you,

my French perfection.

Mango Mousse Cake

I had a couple of beautifully ripe mangoes in the kitchen,hence I wanted to make a cake that incorporates fresh mangoes .What better way to showcase our seasonal fruit other than the Mango Mousse Cake?:) 

The mousse cake has a base of a soft and moist sponge cake followed by a layer of mango mousse with chunky bits of fresh mangoes and topped with a layer of mango purée jelly. 

I am very pleased with the result as every layer goes so well together.The layers really compliment each other and it accentuates the natural sweetness of the local mangoes.

If you’re not a huge fan of mangoes,any kind of fruits can be substituted or if you are having trouble finding fresh fruits,you can use canned fruits like lychee or peaches for this recipe.
