Semperit/OldSchool Butter Cookies

10 Aug

Class ended a little early today so I got home and decided to start the pre-Raya/Eid baking with ‘Semperit‘ .Semperit is basically  butter cookies taken to a WHOLE NEW LEVEL.It’s very light, crumbly and literally melts in your mouth. The cookies are just so pretty which is an added PLUS.

The recipe is adapted from a popular Malaysian website, myResepi. So why not spare 2 hours of your day and prepare these babies from scratch! It’s easier than you think 😉 .

My first attempt at Semperit was in Adelaide a couple of years back.Well,Raya down under was different but in a good way.I remember baking these until 2am in the morning cause we had a miniature oven back then. So to my Adelaide friends that I have crossed path with & especially to my peeps at 805,803,my favourite red cabbie,my Stars Align family and my crazy girl from botanic apt,

this one’s for you.

Pandan Chiffon Cakes

8 Aug

I have always been intrigued by chiffon cakes in general.Chiffon cakes are light as a feather yet still very moist and oh so very fluffy.

I usually opt for chiffon cakes just because it’s a much healthier option due to the absence of butter .

The chiffon cake that I will be sharing with you beautiful today is Chiffon Cake infused with fresh pandan flavor.

A match made in Heaven.

Mango Mousse Cake

7 Aug

I had a couple of beautifully ripe mangoes in the kitchen, hence I wanted to make a cake that incorporates fresh mangoes .What better way to showcase our seasonal fruit other than the Mango Mousse Cake?:)

The mousse cake has a base of a soft and moist sponge cake followed by a layer of mango mousse with chunky bits of fresh mangoes and topped with a layer of mango purée jelly.

I am very pleased with the result as every layer goes so well together. The layers really compliment each other and it accentuates the natural sweetness of the local mangoes.

If you’re not a huge fan of mangoes, any kind of fruits can be substituted or if you are having trouble finding fresh fruits, you can use canned fruits like lychee or peaches for this recipe.
